12 meals in 3 hours for 100 bucks.

The other day I was searching online for healthy dinner recipes when i stumbled across some recipes for frozen slow cooker meals. You spend a few hours prepping meals and stocking up your freezer and ta-da! All you have to do is dump a bag turn on the slowcooker and dinner is done. :) Image
 
The instructions are pretty much the same for all the meals. All the recipes make 2 bags, so you just split the ingredents into two freezer ziplocks, shake them really well, take all the air out, and freeze. They keep for about 3 – 4 months. You should thaw them for 24 hours before cooking but if you don’t, add 1 hour to the cooking time on high or 2 hours cooking on low.

I wrote on the bag what the meal is and how long to cook it before I filled them. I also wrote a list of ingredients on  an index card for each recipe and crossed it off as i added it to the bag.

If you sort all the meat first into the bags first, then scrub the counters and clean up, you won’t have to wash your hands and sanatize a million times. It took Bryan and I about 2.5 hours to make 12 meals with him cutting veggies and me doing everything else.

Beef Stew – Low 7-10 hrs

  • 1 or 2 pound beef stew cubes
  • 8 carrots, sliced
  • 8 red potatoes, cut into large cubes
  • 2 package dry onion soup mix
  • 4 cans 98% fat-free cream of mushroom soup
  • 2 (8 oz) can tomato sauce
  • 20 oz package frozen green peas

Lime Chicken with black beans – High 4 hrs or Low 6-8

  • 6 chicken breasts
  • Lime juice (Squeeze 1 lime per bag)
  • 1 bunch fresh cilantro, chopped
  • 32 oz bag frozen corn
  • 4 minced garlic cloves
  • 1 yellow onion, chopped
  • 4 sliced tomatoes
  • 2 can black beans, drained and rinsed
  • 2 tsp cumin
  • 2 T chili powder

Stephanie – High 4-6 hrs Low 6 – 8

  • 3 cups chopped onions
  • 2.5 cups coarsely chopped green bell peppers, about 2
  • 4 large beets, peeled and diced, about 2 cups
  • 2 cups of baby carrots or diced carrots
  • 4 cloves garlic, minced
  • 2-3 pounds beef stew meat, cut into one inch cubes
  • 4 6oz cans tomato paste
  • 2 tablespoons of Hungarian paprika or regular paprika (I used regular)
  • 1 teaspoon ground black pepper
  • 4 cups hot cooked noodles, do not add in freezer bag, cook separately, day of cooking
  • 1/2 cup dairy sour cream, do not add in freezer bag, use as garnish, day of cooking

Black Bean Taco Soup – High 1-2 hrs Low

  • 2-3 2 lb lean ground beef (or ground turkey) Cooked and drained
  • 2 medium onion, chopped
  • 2 package mild taco seasoning mix
  • 32 oz bag frozen corn
  • 2 (16 oz) can black beans drained and rinsed (you could use kidney beans or pinto beans)
  • 2 (14 oz) cans stewed tomatoes
  • 2 (8 oz) can tomato sauce

Chicken Teriyaki – High 3-4 Low 6-8

  • 2 cup soy sauce
  • 2 cup sugar
  • 2 teaspoon garlic salt
  • 1 onion, chopped
  • 2 to 3 lbs chicken breasts

BBQ Chicken Low 6-8 hrs High 4-6 hrs

  • 3 medium unpeeled sweet potatoes, cut into 1/2 inch pieces, about 2 cups
  • 2 large green pepper, cut into strips or cubes, about 2 cups
  • 1 large red pepper, cut into strips or cubes, about 1 cup
  • 2 zucchini, chopped, about 2 cups
  • 2 cups chopped onion
  • 2 tablespoon quick cooking tapioca (or flour, or some other thickening agent)
  • 2 pounds chicken thighs or drumsticks
  • 2 15oz cans of tomato sauce
  • 4 tablespoons packed brown sugar
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoon ground yellow mustard
  • 2 clove garlic, finely minced
  • 1 teaspoon salt
